The Role

Viking is a leading global company in experiential travel, operating over 100 ships across 21 rivers, five oceans, and all seven continents. We focus on providing enriching experiences for travelers interested in science, history, culture, and cuisine. As a Sous Chef, you will assist the Chef de Cuisine and/or Executive Chef in managing the Galley operations, ensuring high standards of food quality and guest service.

The Role

In this role, you will oversee food preparation areas, manage service line operations, and ensure a friendly, guest-oriented service culture. You will be responsible for maintaining food safety, quality production, and a clean working environment.

Responsibilities

  • Demonstrate excellent cooking skills and creativity in buffet presentations.
  • Collaborate with the Kitchen Steward on inventory and equipment maintenance.
  • Conduct quality checks on daily storeroom deliveries and fresh produce.
  • Manage the Dinner Service Line for smooth and efficient service.
  • Enforce cleanliness standards and safe working policies in the Galley.
  • Supervise Galley operations during inspections and ensure compliance with Public Health Policies.
  • Prepare work schedules and maintain crew hours paperwork.
  • Lead and support a multi-cultural team, ensuring high crew satisfaction and performance.
  • Conduct performance reviews and ensure compliance with Maritime Labor Convention (MLC).
  • Host culinary workshops and cooking demonstrations.
  • Temporarily assume the Chef de Cuisine's responsibilities when necessary.

Requirements

  • Minimum 3-4 years of experience as a Sous Chef in a 5-star resort, hotel, or premium restaurant.
  • Fluent in English with excellent communication skills.
  • Experience leading multi-cultural teams and managing stress effectively.
  • Strong administrative skills and proficiency in PC-based software.
  • Guest-focused with a positive personality and impeccable hygiene standards.
  • Must be at least 21 years old and able to lift 50+ lbs (30 KGs).
  • Previous cruise industry experience is a plus.
