The Role

Executive Pastry Chef – Five-Star Luxury Hotel (Dubai) This position is with one of Dubai’s most prestigious five-star luxury hotels, recognized globally for its culinary excellence and exceptional guest experiences. The hotel is part of a renowned luxury hospitality group celebrated for its award-winning dining and extensive banqueting services.

The Role

We are looking for a talented, innovative, and operationally adept Executive Pastry Chef to oversee the pastry and bakery operations at this distinguished luxury hotel in Dubai. The ideal candidate will possess a solid foundation in both British and French pastry traditions, enhanced by modern techniques and artistic presentation. Experience in Michelin-starred kitchens or similar high-caliber dining environments is highly valued.

Responsibilities

  • Lead and manage all pastry and bakery operations across restaurants, lounges, banquets, and events.
  • Develop refined and innovative dessert menus based on classical British and French pastry techniques, in line with luxury brand standards.
  • Ensure consistent excellence in presentation, flavor, and production in high-volume operations.
  • Oversee daily kitchen operations, production planning, and service execution.
  • Maintain strict adherence to food safety, HACCP, and hygiene regulations.
  • Effectively manage food costs, labor costs, inventory, and minimize wastage.
  • Collaborate with the Executive Chef and F&B leadership on menu development and seasonal offerings.
  • Support large-scale banquets, VIP events, and high-profile culinary activations.
  • Train, mentor, and develop a diverse pastry team, encouraging creativity and succession planning.
  • Stay updated on global pastry trends, luxury presentation styles, and industry innovations.
  • Represent the hotel professionally during tastings, guest interactions, VIP functions, and selected brand engagements.

Requirements

  • Proven experience as an Executive Pastry Chef or Senior Pastry Chef in a five-star luxury or Michelin-standard environment.
  • Strong expertise in British and French pastry, bakery, plated desserts, and chocolate work.
  • Michelin background or experience in Michelin-recognized kitchens is a significant advantage.
  • Demonstrated experience managing high-volume operations, including large banqueting and multiple outlets.
  • Exceptional leadership, communication, and team development skills.
  • Strong commercial understanding of cost control and menu engineering.
  • Creative, structured, and detail-oriented with a passion for culinary excellence.
  • Ability to thrive under pressure in a fast-paced luxury hospitality environment.
  • International experience, especially within the Middle East or luxury brands, is a plus.
  • Relevant culinary certifications or professional qualifications are preferred.

Work Schedule

This role follows an operational schedule based on luxury hospitality requirements. Working hours may include evenings, weekends, and public holidays, especially during peak seasons, banquets, and special events. Weekly days off will be rotational and subject to operational needs.
